2012 Professional Culinology® Competition

For the inaugural 2012 RCA Professional Culinology® Competition, an ACF sanctioned culinary competition, professional teams consisting of one (1) RCA member and one (1) ACF member will compete for a $5,000 first place award by developing a written proposal for three (3) tapas, one of which must feature beans, for a casual dining restaurant chain.  Both gold standard kitchen recipes and their corresponding commercialized production formulations must be provided.  Selected finalists will commercialize and ship their product to the competition site in San Antonio, TX.  On the day of the competition, March 23, 2012, up to 6 finalists will create the fresh product version of their concept, and be judged in part against how well the plated, commercialized concept matches up against the gold standard.

As an ACF sanctioned culinary competition, finalists will compete not only for a $5,000 first place award, but also for ACF competition medals.
